Sweet Potato Taco Bowl

Ingredients

Sweet potatoes, peeled and cut into 1-2″ cubes

Vegetable oil

1 Tbsp

Taco seasoning, divided

2 1/2 cups

Romaine lettuce, chopped

1/2 cup

Dairy-free, Mexican style low protein shredded cheese

1 Tbsp

Dairy-free sour cream (low protein)

1 Tbsp

Cilantro, fresh, chopped

1/2 cup

Bell peppers

½ cup

Red onion, finely chopped

1/4 cup

Corn kernels (fresh, frozen or roasted)

Black olives, sliced, pitted

Directions

  1. Preheat oven to 400° F.
  2. Toss sweet potatoes with vegetable oil and half of the taco seasoning in a large bowl.
  3. Spread sweet potatoes in a single layer on a foil-lined baking sheet pan. Roast for 25 to 30 minutes or until tender, stirring after the first 10 minutes.
  4. Divide lettuce into three bowls.
  5. Top with the sweet potatoes.
  6. Sprinkle remaining taco seasoning over the sweet potatoes.
  7. Divide the remaining ingredients between the three bowls.

Serving Suggestion: Squeeze the lime slice over the bowl ingredients. Add some chili powder for a spicy kick!
