KATSU JACKFRUIT SUSHI

Ingredients

1 ¼ cup

(300 ml) water 

2/3 cup

(100 g) low protein rice, uncooked

2 tsp

extra fine granulated sugar

1 tsp

salt

1 Tbsp

rice vinegar

1/4 cup

(35 g) jackfruit, canned, in brine 

1 shallot

finely diced

1 Tbsp

vegetable oil

1 tsp

curry powder

4 tsp

juice from the jackfruit

1 tsp

light soy sauce

1 Tbsp

honey

1 red

pepper, sliced

1 green

pepper, sliced

2 nori

sheets

Bamboo rolling mat

Directions

  1. Add water and rice to a large saucepan; bring to a boil.
    Cover and gently simmer for about 11 minutes, stirring frequently to prevent sticking.
  2. Drain rice once it is cooked; set aside to cool.
  3. Dissolve sugar and salt in the vinegar in a mediumsized bowl.
  4. Coat the rice with the vinegar mixture and set aside.
  5. Drain jackfruit and pull apart in thin strands, setting aside 4 tsp of the juice.
  6. Sauté shallots for 1 minute in oil. Stir in jackfruit and curry powder; cooking for two minutes.
  7. Add jackfruit juice, soy sauce and honey; reduce until mixture becomes sticky. Set aside to cool.
  8. Spread half of the rice over each nori sheet.
  9. Add peppers and jackfruit mixture; roll using a bamboo rolling mat. Cover in plastic wrap and refrigerate for about15 minutes.
  10. Slice into 8 pieces per roll.
  11. Serve with a little soy sauce.*
