Ingredients

12 oz

(340 g) silken tofu, soft

1 Tbsp

 (12 g) erythritol sweetener

1 tsp

vanilla extract

1 cup

(240 ml) soy milk, unsweetened

1 Tbsp

(5 g) cocoa powder, unsweetened

1 tsp

cinnamon, ground

1 1/4 tsp

 xanthan gum

1/2

 Tbsp (8 g) vegan

4 mint

leaves (optional)*

Directions

1. Blend tofu, sweetener, vanilla, and soy milk together with a stick blender until smooth.
2. Whisk in cocoa powder, cinnamon, and xanthan gum.
3. Divide pudding into four bowls; and sprinkle chocolate shavings over each. Garnish with a mint leaf if desired.
4. Refrigerate for at least 30 minutes and enjoy.
