Ingredients

1 cup

(120 g) high fiber, low carbohydrate flour

3/4 tsp

baking powder

1/2 tsp

garlic powder

1/4 tsp

fajita mix

1/3 cup

water

1 tsp

(5g) tomato purée

Nachos

Cooking spray

1/2 cup

(120 g) avocado, peeled, pitted, mashed

1 tsp

chili powder

Salt and Black

Pepper to taste

1/4 cup

(48 g) sour cream, reduced fat

1/2 cup

(56 g) cheddar cheese, reduced fat, shredded

1 cup

(60 g) fresh tomatoes, diced

Directions

Tortillas
 

  1. Add flour, baking powder, garlic powder and fajita mix into a bowl.
  2. Mix water and tomato purée together in aseparate bowl.
  3. Add the wet ingredients to the flour mixture and knead into a dough.
  4. Divide dough into 4 equal portions and roll into 4-inch circles.
  5. Heat a dry frying pan to medium heat and cook each tortilla for a couple of minutes on each side.
  6. Set tortillas aside to cool, and cover with a clean tea towel.

 

Nachos
 

  1. Preheat oven to 390° F.
  2. Cut tortillas into triangles using a sharp knife.
  3. Spray each side with cooking spray and place on a baking tray.
  4. Bake in preheated oven for 5-8 minutes, or until crispy and golden brown
  5. Mix together avocado, chili powder, salt, and pepper in a large bowl.
  6. Spread tortilla chips on a plate, and top with avocado mixture, sour cream, cheese and tomatoes.
