Cauliflower Crust Pizza

Ingredients

1 – 14.5 oz

(411 g) can diced tomatoes

1/2 Tbsp

lemon juice, fresh

2 Tbsp

extra virgin olive oil

1/4 tsp

black pepper, ground

1/2 tsp

garlic powder

1/2 tsp

dried parsley

Crust
1 medium-sized

cauliflower, cut into small florets

4 garlic

cloves, minced

1 tsp

onion powder

1/4 tsp

dried oregano

1/2 cup

(56 g) part-skim 

3 1/2 Tbsp

(26 g) parmesan cheese, grated

2 large

eggs, beaten

1/8 tsp

salt 

1/8 tsp

ground black pepper

Topping
1 cup

 (90 g) broccoli, finely sliced

1/2 cup (

35 g) mushrooms, 

1/2 cup

56 g) part-skim mozzarella cheese, shredded

basil leaves, fresh, 

Directions

Marinara Sauce
1. Mix all ingredients together and add to a saucepan.
2. Cook over medium heat until gently bubbling; then reduce the heat and simmer for 30 minutes.
3. Stir occasionally.
 

Crust and Topping
1. Preheat oven to 360˚ F.
2. Blend cauliflower into a paste in a blender.
3. Strain cauliflower through a doubled cheesecloth or thin cotton tea towel; squeeze out excess water.
Repeat until cauliflower is as dry as possible.
4. Mix together cauliflower, garlic, onion powder, oregano, cheeses, eggs, salt, and pepper in a large bowl.
5. Spray large baking sheet or pizza pan with cooking spray; spread cauliflower mixture out onto it until thin.
6. Bake cauliflower base in preheated oven for 40-45 minutes, or until golden brown.
7. Sauté broccoli and mushrooms in a non-stick pan until soft. Set aside.
8. Remove crust from the oven once cooked; top with marinara sauce and 1/2 cup mozzarella. Bake for another 5-7 minutes.
9. Remove pizza from oven when ready; top with basil, mushrooms and broccoli.
10. Cut into 8 equal-sized slices and serve.
