Ingredients

1 - 15.5 oz

 (439 g) can black beans, drained and rinsed 

2 large

eggs

1/2 of a large

 ripe avocado, peeled and pitted

2/3 cup

(54 g) unsweetened cocoa powder

1 Tbsp

 coconut oil, melted

1/2 tsp

baking powder

1/4 tsp

baking soda

1/4 tsp

salt

1 tsp

vanilla extract

2/3 cup

(128 g) erythritol or other artificial sweetener for baking (equivalent in sweetness to 1/2 cup sugar)

1/2 cup

(60 g) walnuts, chopped

1/4cup

(60 g) sugar-free chocolate baking chips

Directions

  1. Preheat oven to 320˚F.
  2. Grease and line an 8-inch round cake tin.
  3. Blend all ingredients together (except walnuts and chocolate chips) in a food processor (or blender) until completely smooth.
  4. Pour batter into a large bowl. Fold walnuts gently into batter.
  5. Pour batter into the prepared cake tin.
  6. Sprinkle chocolate chips evenly over the top.
  7. Bake in preheated oven for 30 minutes; or until a knife inserted into the center comes out clean.
  8. Cool on cooling rack for at least 20 minutes.
  9. Cut into 16 slices and serve.
